2 Fish Fillets
Juice of 1 Large Lime
1 Medium-sized Red Onion
Fresh Coriander Leaves (chopped)
1 Sweet Potato (cooked and sliced )
A few lettuce leaves
Wash the fish thoroughly and dice it. Thinly slice the onion, wash and dry well. And finally slice the chilli. In a large bowl mix the fish, red onion, lime juice, chilli and salt. Cover and place in the fridge for 30 minutes. Prepare 4 plates, using one lettuce leaf as the base, and place the sweet potato and corn beside the leaf. Serve the ceviche over the lettuce and garnish using fresh coriander leaves.
Quite simple, right? There are many appetising variations of ceviche in Latin America these days. Some optional modifications for flavour include the addition of minced garlic, fish bone broth and tomato sauce.
In South America the most preferred kinds of fish to make ceviche are: sea bass, halibut, hake, brama australis (brama chilensis) and tuna. Also, it is common to find ceviches adding prawns, black clams, oysters, octopus, or even squid as main ingredients. In some parts of the Caribbean, you will find that coconut milk is added to ceviche. And in the Bahamas conch ceviche is a popular choice too.
