BRAZILIAN BLACK BEANS AND WHITE RICE 🇧🇷 by Andressa Ricci-Williams
Oi, pessoal. Here I am again with the most loved Brazilian dish. If you ask any one of us what food we would like to eat everyday for the rest of our days, easy answer: feijao e arroz – BLACK BEANS AND RICE, BRAZILIAN STYLE.
One thing is for sure: it’s undeniably a Brazilian authentic sweetheart. Just like British scones, there is a ongoing strong debate on which one is on the bottom and which one goes on top!

Cook time: 40 min
INGREDIENTS: ◇ 1 lb dry black beans or 2 Cans Black Beans, drained and rinsed ◇ 4 slices bacon (the smaller pieces you can get, the better) ◇ 2 chorizos (choose the meaty ones and slice them) ◇ 1 small-medium onion, diced ◇ 5–6 cloves garlic, pressed or minced ◇ 4 cups vegetable broth (can use chicken or beef, or even water instead) ◇ 1 ½ cup water (more if desired, for “soupier” beans) ◇ 1 tablespoon salt (the meat will already make it salty) ◇ 1/4 teaspoon cumin ◇ 1/4 teaspoon coriander ◇ 1/2 teaspoon black pepper ◇ 3 laurel leaf ◇ cooked white rice for serving
METHOD: 1. Cut the chorizos into thin round slices and boil for about 5-7min. 2. Cut the bacon into thin pieces too. 3. Heat pressure cooker to medium-high heat (saute setting for electric pressure cooker, medium heat on stove top for regular pressure cooker). 4. Fry bacon and chorizo until lightly browned and starting to crisp, add onion, stirring often for 3-4 minutes. Add garlic and stir for about 30 seconds. 5. Add beans, broth and water, salt, pepper and the spices. Stir to combine and secure lid. Cook on high pressure for 40 minutes. 6. Use the back of a spoon or rubber spatula so smash some of the beans – this will thicken the sauce.
Now, just add to the white rice, you can add a protein: beef or chicken or even a fried egg on top... and enjoy!!
