Shrimp Fried Rice 🥡🥢 1 tbsp vegetable oil
2 cloves garlic, minced
1 tsp ginger, grated
2 carrots, peeled and finely chopped
1 cup broccoli 🥦 florets
1 lb shrimp, peeled and deveined
3 cups cooked chilled long grain white or brown rice
1/3 cup soy sauce
2 tsp. toasted sesame oil
1 large egg
Sriracha, for a lil spice 🌶
2 tbsp Sliced green onions, for garnish
1 tbsp sesame seeds, for garnish
1. In a wok or medium skillet over medium heat, heat oil. Add shrimp, brown on each side & remove from pan. Add carrots, onions, garlic and ginger and sauté, 3-4 minutes, add the broccoli and continue cooking until vegetables are slightly tender, stirring occasionally. Remove from pan & set aside.
2. Stir in rice and season with soy sauce, sriracha and sesame oil. Sauté for 3-4 minutes, allowing the rice to slightly brown.
3. Push rice to one side of the skillet and add the egg. Stir egg constantly until almost fully cooked, then fold into rice mixture. Add the vegetables back into the pan and mix to combine for 2-3 minutes. Add the shrimp back to the pan and sauté for another 2-3 minutes until well combined. Adjust seasonings & garnish with green onions and/or sesame seeds and serve. 😋 **I do not own the rights to this music!
